Happy Cinco de Mayo, friends!

Sadly, I’m in the midst of my (last ever!) finals, so my plans to celebrate with a taco bar + cactus cupcakes + margaritas with my friends were kind of unrealistic. Oh well, next year! At least I got to drink my iced coffee out of a festive straw and eat candy out of a mini piñata!

So far on social media I’ve seen so many fun ways to celebrate! Lots of yummy margarita recipes, interesting taco recipes, and even cactus shaped green pancakes! I’ve also seen a bunch of extra colorful flowers on my Instagram feed, and an outrageous (but also perfect) amount of confetti. So much inspiration for next year when I will definitely have more time to appropriately celebrate. For now, I’ll be studying and working on what feels like endless group projects.

And for you guac fans out there, here’s my foolproof recipe:

– 2 whole avocados

– 1 tomato, diced

– 1/4th of a big red onion, diced

– a whole jalapeño with seeds removed, diced

– the juice of half a lime

– salt and pepper to taste

scoop the ripe avocados and squeeze the lemon juice into a food processor and press ‘chop’. Don’t hold the butten down, but press it 4 distinct times (1 second/press). This way, you’ll get a creamy mixture that’s not too thin. Then add all the other ingredients, mix it together so it’s all integrated evenly, and serve that shit up on some warm tortilla chips. Damn, right?

a day of detoxing

First, let me start with this. For any of you graduating seniors out there that still don’t have a job, a place to live, and maybe even have a long-term long-distance boyfriend whose existence, while great, is at the moment really complicating things: It’s going to be okay. We’re going to be okay. Things will work out in whatever way they have to, and we will be okay. Repeat this while shoving chocolate in your face, and you’ll really start to believe it.

Which brings me to this: After having just about the unhealthiest week ever (full of stress eating, excessive drinking, drunchies, and pre-made/processed food to fit my busy schedule), it’s time to take a step back and reset my body. As a bona fide food enthusiast, it’s sometimes really easy to get carried away with beautiful and indulgent things, so it’s nice to let my body detox every so often. Below are the details of my detox day:

FullSizeRenderI start my day off with coffee, because there’s no way I can get anything done without it. And instead of a big breakfast that I usually have, I have this green juice. It has almost 5 pound of vegetables in it, and it doesn’t have the gross aftertaste that some green juices have. Plus, I can actually get work done at my desk when I’m not preoccupied with shoveling a waffle into my face. Who knew?

I’m still me, and that means water and juice just aren’t going to cut it all day. So for lunch I make a yogurt bowl, with plain Greek yogurt (Chobani is the best), two strawberries, a couple of mango slices, some blueberries, all natural coconut chips, and chia seeds. Obviously, this is cheating in a big way from real juice cleanses…but my rationale is I’m eating real fruit and low-sugar yogurt…so how bad could it REALLY be? It isn’t a donut, which is frankly what I wanted at this point in the day!

For my post-run dinner I need some protein, so I do a protein shake (I use GMC’s total lean in vanilla) and another green juice. This evolution one has coconut water in it, so it’s just sweet enough. Plus, I feel so hydrated after a sweat session.

There ya have it! I wasn’t ravenous and I didn’t have a headache (which happens whenever I try strictly juice cleanses), but I still feel fresh and rejuvenated.

Disclaimer: I may or may not have had a slice of pizza waaay later in the night. In my defense, I needed an excuse to leave my group project for a minute. That shit drives me bonkers.

doller drafts + Target runs

My closest friends and family will all attest to how appropriate it is that I’m basically dedicating my first post on here to Target. But oh well, c’est la vie!

This week has basically been a giant shitstorm. I’ve gotten virtually no sleep the entire week and I’ve been attempting to do a million really important things (like, ya know, find a job and a place to live) all while balancing pretty busy classes and not missing out on the last few weeks of my undergraduate career! This week really must have ran my body and mind into the ground, because this morning I did the weirdest thing. I woke up, and as usual I kind of zombie-walked my way out of my room and into the bathroom. After turning on the shower, I decided I would go ahead and brew my morning coffee while I waited for the water to warm up. I made my way into the kitchen, washed out the coffee pot, filled it with new water, measured out 2 scoops of brew, and then looked at the clock… 2:02 am. What?! I’ve been so tired lately that I can no longer distinguish between 6 am exhaustion and 2 am exhaustion. Great. I know this happens to people regularly, but never me. At least I got to go back to bed for four more hours, right? 😉

During weeks like these there are a few tried and true methods that I depend on to raise my spirits. One is to go to Target. That place just gets me. I can always find things exactly to my taste there, and I find myself getting really energized and inspired when I’m surrounded by so many goods I appreciate. Seriously, there’s always something there that I want need want.

This time I went in search of some Cinco de Mayo gear, but naturally I walked out with my cart lookin’ like a hot mess. I got distracted by the graduation celebration stuff, the party supplies, and the healthy choice grocery section. Nothing like some Boom Chicka Pop popcorn, dried coconut flakes, and gluten free pasta to inspire you to make good choices, right? Besides, how can anyone resist that packaging?! I’m a marketing major’s dream target.

FullSizeRenderOne of my favorite ways to incorporate some color into my every day life is by straws. A bright, colorful straw just makes an otherwise boring iced coffee so much more fun! And I don’t know about you, but when things are prettier they taste better too. I’ve been having a major love affair with light purple so I restocked my supply with these beauties. They go so well with these itty bitty cupcakes, and the color scheme as a whole is really working for me. This is my first attempt at integrating a little more purple into my home, and needless to say I’ll definitely be adding more! Then again, cupcakes are always pretty.

Aaaaand another dependable pick-me-up: dollar drafts at my school’s local pizza joint with some of my best friends. Here’s to the weekend finally being around the corner!
