Strawberries on Sunday

Well, well, well. It’s been a while, I know. The past two weeks were, how you say, bat shit crazy. Work has been nuts, my to do list was endless, I had an organic chemistry test on Saturday, and life was just altogether a little bit more challenging. So this weekend was spent relaxing. No organization projects, no productivity, no exciting outings. It was all hardcore chilling on the couch, watching movie after movie, and punctuating every other movie with nap. Very little outside world interaction. And ya know what? That’s okay! I usually feel really guilty if I waste any of my free time inside, but this week I really needed the recharge. Healthy rule #1 is respect your body’s needs, and my body was needing the couch.

Come Sunday morning, my body was also needing waffles. I went ahead and obliged. There’s this little farmer’s market down the street from my apartment every Sunday, so I stopped by intending on buying some coffee and a carton of berries for topping the waffles. Nope, I came out with a huge bundle of rhubarb (!) and 3 cartons of berries packed to the brim. People, I think we’re officially in strawberry season.


I guess California has pretty much a 12 month strawberry season, but my internal clock is screaming “berries!!!” because now would be about the time for them to reach their peak on the east coast. In any case, these did not disappoint. Now I’m officially researching any strawberry (and rhubarb) recipe I can. Stay tuned, because I feel myself going on a flavor rampage.


Anyway, back to the waffles. I used Kodiak cake pancake mix for the waffles (I’ve mentioned before that Mark and I are obsessed with the stuff), topped it with the fresh strawberries, homemade whipped cream, and coconut shreds. It was like a strawberry short cake waffle! Preparing an easy but seemingly special breakfast like this was exactly what I needed to treat my “Sunday Scaries”, otherwise known as the feeling of sadness when you realize that your relaxing, couch-surfing weekend is almost over and soon you’ll have to head back to work. It’s like when you get to go out to Happy Hour on a Wednesday. Sometimes you just need that extra treat to get you through.

And just remember this week, when in doubt just listen to the wise words of Leslie Knope, “We have to remember what is important in life: friends, waffles, and work. Or waffles, friends, work. But work has to come third.”
